Real-Life Risotto Recipe to the Rescue!! Homemade, Hands-off, and Ready in less than 30 minutes!

This delicious and easy to make InstantPot risotto dish is gluten-free, dairy-free, and can easily accomodate plant-based diets. Some of my favorite additions are: chicken apple sausage, nutritional yeast, parmesean cheese, satueed squash, asparagus, lemon garlic chicken, and cherry tomatoes. It’s perfect for busy weeknights when you need a nourishing homemade meal in a hurry!
Easy Instant Pot Risotto (GF, DF, can be made vegan/plant-based)

This delicious and easy to make InstantPot risotto dish is gluten-free, dairy-free, and can easily accomodate plant-based diets. Some of my favorite additions are: chicken apple sausage, nutritional yeast, peas, parmesean cheese, satueed squash, asparagus, lemon garlic chicken, and cherry tomatoes. It’s perfect for busy weeknights when you need a nourishing homemade meal in a hurry!
Combine all ingredients in the Instant Pot and stir.
Close the lid and set the vent to the “SEAL” position.
Set the Instant Pot to 6 minutes on the “MANUAL” setting. It will take 10 minutes or so to fully come to pressure before starting the 6 minutes.
Release the pressure immediately after the 6 minute timer ends (no natural release).
Remove the lid once the pressure indicator drops.
Add the lemon juice, stir, and serve! The sauce will thicken quickly.
Recipe Note
You can elevate this dish by using the Instant Pot's saute feature with one chopped onion or shallot (instead of the onion powder) and the arborio rice in 2 tsp avocado or coconut oil or plant-based/grass-fed butter until the onion is transluscent. Then add 2 cloves of minced garlic (instead of the garlic powder) and continue cooking for 1 minute before adding the broth, sealing, and setting the 6 minute manual cook.
